My Fave Drugstore Buys!

So, I ABSOUTELY love Wal-Greens! I could walk around that store for hours... and I HAVE!! (AND Target! LOL!) There's just soo much there, with a cure or fix for just about anything! Here are some of the MAJOR great products I've found there, & here they are;

Queen Helene Mint Julep Mask - Best for blemishes! And smells soooo minty, and feels major refreshing!

Burt's Bees Lip Balm - Just the plain ole stuff in the yellow tube. Works good for dry skin patches too,  if you don't have lotion.

Vaseline - For moisturizing, removing makeup, blending makeup, protecting skin from hair-dye, ... the possibilities are ENDLESS!!

Veet Hair Removal Kit - If you're as bad at shaving as I am, you'll love this kit! With a bladeless razor & thick formula, this kits rocks!

Jergens Natural Glow Daily Moisturizer for Body / Face - Daily tanning w/ no harmful rays .. ALWAYS good!!

One a Day Womens Vitamin Packets - LOVE these! Nommy flavor, & vitamins are good!

Q-tips - ..Just like Vaseline, the possibilites are endless!

Nikkis Pork & Shrimp Eggrolls

Nikkis Pork & Shrimp Eggrolls


1/2 lb. ground pork
1 clove minced garlic
1 tbsp. cooking oil
2 c. finely chopped bok choy
1 c. chopped fresh mushrooms
1/2 c. finely chopped onion
1/2 c. finely chopped celery
1/2 c. chopped water chestnuts
1/4 c. shredded carrot
1 (4 1/2 oz.) can shrimp
1 beaten egg
2 tbsp. soy sauce
2 tbsp. sherry
1/2 tsp. sugar
1 pkg. egg roll wrappers

In skillet stir-fry pork and garlic in tablespoon hot oil (drain). Add vegetables and stir-fry for 3 or 4 minutes more. Drain shrimp and chop. In a bowl combine shrimp, pork-vegetable mixture, egg, soy sauce, sherry, sugar and salt. Mix well and chill.

Use approximately 2 heaping tablespoons for each egg roll - deep fry until golden brown. Serve warm, with Sweet and Sour, and Soy Sauce. Also, Wasabi if you like!! (I do!)

Nikkis Southwest Eggrolls w/ Spicy Ranch Sauce

Ingredients


2 tablespoons vegetable oil
1 skinless, boneless chicken breast half
2 tablespoons minced green onion
2 tablespoons minced red bell pepper
1/3 cup frozen corn kernels
1/4 cup black beans, rinsed and drained
3 tablespoons frozen chopped spinach, thawed and drained
2 tablespoons diced jalapeno peppers
1 tablespoon minced fresh parsley & cilantro
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/3 teaspoon salt
1 pinch ground cayenne pepper
1 cup shredded Monterey Jack cheese
5 (6 inch) flour tortillas
1 quart oil for deep frying

Directions

Rub 1 tablespoon vegetable oil over chicken breast. In a medium saucepan over medium heat, cook chicken approximately 5 minutes per side, until meat is no longer pink and juices run clear. Remove from heat and set aside.

Heat remaining 1 tablespoon vegetable oil in a medium saucepan over medium heat. Stir in green onion and red pepper. Cook and stir 5 minutes, until tender.

Dice chicken and mix into the pan with onion and red pepper. Mix in corn, black beans, spinach, jalapeno peppers, parsley, cumin, chili powder, salt and cayenne pepper. Cook and stir 5 minutes, until well blended and tender. Remove from heat and stir in Monterey Jack cheese so that it melts.

Wrap tortillas with a clean, lightly moist cloth. Microwave on high approximately 1 minute, or until hot and pliable.

Spoon even amounts of the mixture into each tortilla. Fold ends of tortillas, then roll tightly around mixture. Secure with toothpicks. Arrange in a medium dish, cover with plastic, and place in the freezer. Freeze at least 4 hours.

In a large, deep skillet, heat oil for deep frying to 375 degrees F (190 degrees C). Deep fry frozen, stuffed tortillas 10 minutes each, or until dark golden brown. Drain on paper towels before serving.
 
Spicy Ranch Sauce: Combine Buttermilk, Ranch Dressing mix packet, cumin, pepper, garlic, cayenne, black pepper & paprika.
