O'Learys Trading Company.. and Pawn?

Since opening O'Learys Trading Company in 2008, I have become more & more hooked on the idea of expanding that idea, and integrating a Pawn Shop! I'm a treasure-hunter, so this hs been a fun venture for me!
I started OTC with the idea that people had quality items to sell, but had limited knowledge, or were intimidated by selling online. This idea has been proven to me time & time again. I would like to expand my online sales into a store, and eventually, a full-blown pawn shop! I watch the excitement on shows, like Hardcore Pawn, and Pawn Queens. I know my day-to-day wouldn't be quite as exciting in our small town, but I'd be excited to see what people had to pawn, ore interestingly, how much they thought it was worth. I'm a bit of a treasure-hunter, so resales, pawns and antiques are right up my alley. I love finding valuable items for cheap prices at thrift stores & rummage sales, and have developed a good eye for finding treasures. What's better is turning my find into a profit!

Of course, this will take some time. (ugg, I'm soooo not patient!!) In the meantime, look for more auctions, items for sale, and keep in mind; while you're cleaning out your basement, attic, shed, parents house, wherever, and you end up with piles of junk? CALL ME! I'll be there! Boxes of stuff, furniture, art, books, anything! I will take it off your hands, or offer cash for your item(s).

Hair Review

HAIR REVIEW:
So, I'm usually pretty picky about who cuts my hair. It's rare that I go all out & try something new, but I figured I would for my birthday. Heidi Ernest, at Hair Designs in Silver Bay, did my amazing updo for my wedding, so I figured if I could trust her with my wedding hair, I can trust her with everyday hair; Good call, Nikki! My new cut is FABULOUS! It's exactly what I wanted, and I'm so happy I went back to her! I will definitely be trusting my locks to Heidi from now on, and I HIGHLY recommend her! Thanks, Heidi!

Birthday Resolutions

I know all about New Years Resolutions; the list of things you want to achieve, but never do. (come one, how many have YOU kept up with??) Face it, by the end of February, you've thrown 'em out the window. (it's ok, we all do). I actually don't take those as seriously as I do my Birthday Resolutions.

Every year, right before my birthday, I write out my Birthday Resolutions. Now, they aren't all things like "Quit Smoking" (which I don't anyways), but more things I want to accomplish over the next year. Things I wan to to learn, places I want to go, events I want to see, etc.. kind of like a yearly Bucket List. (I'm a list person) 

Some things on my list this year? Learning to play the guitar that Jake bought me 2(!) years ago, getting to a fluent level in German, go to the Renaissance Fair, have booths at Tori/Booya, etc,. go fishing on the big lake, check out Ely Steakhouse/Texas Roadhouse, expand my jewelry line, become eBay Powerseller, and expand my Avon downline to 10 Reps. This isn't the whole list, but just an example. I even list simple things, like new places to eat. It's fun to check things off, and it's like my year-long birthday scavenger hunt.

Nikki's Mad Hatter Un-Birthday Party

OMG, 2010 has been QUITE a year. After all that, I'm DEFINITELY ready to cut loose with some birthday fun!!
I always have such anxiety when my birthday nears. I want to celebrate with my friends, but with it being so close to Christmas, it's hard for everyone to get away. That's why I'm looking forward to this party - it's a few days earlier, hopefully helping more people to be able to come have a drink with me for my birthday! Even if it's just for one (lol), I'm still glad when someone stops by my party- means alot :) Always fun to whoop it up with my friends!

N's Movie Reviews

Alright, so the last 3 new movies I've watched were: Alice in Wonderland, The Bounty Hunter, and Killers. This is the part where I tell you what I thought, and then you can tell me!

Alice in Wonderland: Ok, I obviously liked this one, but my favorite part is Johnny Depps character, the Hatter. I love when he plays such ambiguous characters! You don't really know if he wants to help you or not. Also Helena Bonham Carter as Red Queen is great, too. Solid character. And the scenery is amazing. LOVE this flick! I give this one 5 Stars *****

The Bounty Hunter: with Gerard Butler (not a fan) and Jennifer Aniston (big fan!). It has it's funny parts, for sure, but I get so tired of it working out in the end. They should've split ways, but that's the anti-romantic side of me. Maybe if they had cast someone as instead of Gerard, I would've liked it more. But, if you're an Aniston fan, it's worth watching. 3 Stars ***

Killers: Ashton Kutcher, & Katherine Heigl. OMG, I LOVE her character in this movie! Nerdy, straight-laced, nervous.. just great! Ashton Kutcher awkwardly stumbles through some serious & romantic scenes in this movie, but he somehow recovers overall, and you love him all over again. Plus, he's topless. :)  OH, and  did I mention Tom Selleck?? (check out the power-'stache!) And Catherine O'Hara as Heigl's delightfully drunken mother. I give this one a solid 4 Stars. ****

So, I've ALWAYS wanted to go to Nikki Beach in Cabo San Lucas because HELLO, it's Nikki Beach, but besides that, look at this menu! OMG, all that fresh seafood just makes my mouth water! I think it's funny that it's all in peso's! (I KNOW why, but I can still giggle!)

Here are some of the menu items that I thought sounded good..

Nikki Beach Special
7 rolls, vegetables ,anguila, camaron, cangrejo, salmon, atun, atun picante and 12 pz de sashimi

Sea Food Salad
Mix vegetables, olive, calamari, shrimp, mussel, scallops marinated with white wine vinaigrette and olive oil.
 
Provolone Beef Medallion
With Wild Mushroom Ravioli, Asparagus and Merlot

St Tropez Wild Salmon and Crab Cake
Stir fried vegetables, herb and garlic aioli.

Pankoco Shrimps
With risotto rice, shitaki, and fresh coconut accompanied with mango sauce and horse radish

Lobster Roll
Maine lobster, roasted fennel, mango, avocado and masago.

Grill Chicken Paninni
Swiss Cheese, Roast Pepper, Spinach and Lemon Alio li Dressing

(BTW, If your mouth isn't watering now, I don't know what's wrong with you!!)

Denise Austin, My Abs Hate You...

Ugg!! I personally am NOT a fan of crunches. Seriously, who is?? If someone tells you they do 500 crunches a day, run away immediately. Because they are insane. Anyways, anything but crunches, please! I'm always looking for an ab workout that doesn't include 'em. Aren't many, BTW. But, I am a big fan of my fitness ball, which I got with a Denise Austin: Hit the Spot Core Complete DVD (found in Parade section of Sunday paper for FREE+$4.95S/H.. watch that section, I've gotten 3 South Beach book for the same deal!)

The 18 minute full-body routine on this DVD is awesome! (After about 20 minutes, I lose my focus anyways!) Every move engages your abs (love it), and they all focus more than one muscle group at a time. which feels great! (abs hate it lol!) It also has 4 other sections, but the full-body is my fave 18 minute way to torture (I mean sculpt) my abs. And because I'm a glutton for punishment and a tough Personal Trainer, I use 5# weights instead of the little hand weights she uses. Plus, I warm-up with a mini-power walk, and some jumping jacks.

So, try this one out, or try out a fitness ball. I'm a fan due to the versatility & effectiveness. Watch your posture, do moves slowly, and keep those abs tight. You'll thank me. (your abs won't.)

Ch ch ch Changes

WHEW this has been a long year!! Up, & down, & back up, & back down.. what a coaster 2010 turned out to be! I really need a change of pace here, SO, time for some changes! Everywhere!

It's definitely time to re-arrange & re-decorate my house. I had a good start on my German kitchen, no I'm looking to expand to the rest of the cabin. Maybe I just need someone else to come over and take a crack at it. I need a fresh approach to the somewhat dismal decorating opportunity. (Did I mention my cabins about 8 sq feet? I'm ALMOST exaggerating...)

HAIRCUT TIME! Seems like no matter what, I'm always disappointed with the cuts I get at salons. I had ONE lady who ever cut it right for my face, and she's too far away now. I need someone who can A) Take the Style I want, and B) Make it work for my face type. Seems simple, right? YA- I can't remember that last time I didn't cry after a hair-cut. SO, maybe it's time to try again. (looking for suggestions, ladies)

I've been pretty crafty lately, exploring my 'domestic-side' - (I DID have one, who knew??) I for sure need to make a new quilt AKA Blankie. Mine is pretty ragged. (but soooo comfy!) And I'm looking for old furniture. Buffets, wooden items, etc.. I've been decoupaging.. hehehe... which seems to keep my attention longer than crochet LOL!!

Oooh oooh.. and maybe a puppy.   :)

Whats Left of Me..

Well, by now, some of you probably are wondering whats going on. I've talked to the people who have text'd me, so they know what happened, so for those of you who I haven't spoken with, this is for you.

2010 has by far been the most emotional year I've ever had. I got married (positive!), and, sadly, lost 4 family members within the last 8 months.

My stepmom died unexpectedly in a hiking accident at Palisade Head in April. This (obviously) a huge shock, since she'd been there so many time before, proving accidents do happen. I miss her so much. She taught me so much about life, finances, all the adult-things in life. (Even shaving my legs!)

Next, I get a call from my sister, informing me that my Grandpa Ramon (Mom's Dad) is in the hospital with complications from tumors in his brain. She said he probably wont be coming back home. And he didn't. Many of you don't know this, but my Grandpa served as some inspiration for the book True Blood.  He had met the author in Vietnam, and spoken with him. This was the conversation where the name Rambo came from. I have my Grandpas autobiography, if anyone is interested. My Grandpa was a proud member of the Band of Lake Superior Ojibwe, and taught me what I know about my Native American culture.

And only days later, my Father-in-Law, Harold, passed away next, from complications with lung cancer as a result of exposure to Asian Orange during his time serving in Vietnam. He was such a great guy, with lots of heart, stories, and a laugh you'd never forget. We'll miss you, Big H.

And, Saturday morning, I got a call from my mother, in tears. My Oma is gone. She passed away in her sleep from her heart problems. (I have to stop for a moment..) And, like so many time already this year, I dropped the phone, fell to my knees in tears. Not sure if I will ever emotionally get back up off my knees. Every person I've lost this year taught me so much. I feel like I keep losing pieces of me. It's making me such a paranoid person, like the last time I see someone will be the LAST time I see them. My Oma & I were so close. She was at my wedding, many of you got to meet her. My German-doppelganger, was had a bond that no one else in our family had. It was a bond of honesty, and trust. She taught me cooking, sewing, rummage saling, you name it, we did it together. DAMMIT, I will miss her so much.

So, this is where I'm at. Definitely not ready for life yet. I feel so overwhelmed, and a bit empty, and lost. I'm hoping a 'mental health day' on the couch with help, complete with reality TV & junk food. Wish me luck. And THANK YOU, for all the FB Hugs, and messages! It really really helps, because it reminds me that I DO have other pieces of me left; the friends & family that ARE still here.

Nikki's Fave Smoothie Recipe :)

I am SUCH a smoothie girl, and this is definitely one of my favorites!

Nikki's Breakfast Smoothie

Ingredients:

■1 cup of frozen berries (blueberries, blackberries, raspberries and/or strawberries)

■1 scoop of whey powder

■1 Tbs. flaxseed oil

■1 Tbs. ground flaxseed

■2 tsp. lemon juice

■1 tsp. unsweetened plain cranberry juice

■1 pack of Stevia/Splenda(to taste)

■8 ice cubes

■1 cup water

Blend until smooth and if needed you can add a few ice cubes to thicken it up. Make a bit over 16 ounces. And Enjoy!

This just opens a whole can of worms with me, haha! And off we go...

First, not a SP fan. End of story. So we won' get into all that. (today). I have also checked out her new show, & it would be much cooler if I didn't have to listen to her annoying voice. However, the hunting & fishing parts are cool to watch, being I do, & I support. Especially for eating.

Second.. um, DUH, SP!! You "anticipated animal activists would not respond well to her going caribou hunting.." REALLY?? It's PETA!! They oppose PETS, from their leather couches. Why would you choose to be a spokesperson for an organization like that?? And then hunt caribou anyways? Your intelligence never fails to amaze me. Must be where she learned how to spend money that isn't hers..

Looking for Junk... DIY time!

As if I need ONE MORE PROJECT... oh well! My creative streak is pretty dominating of my personality lately, must be time to feed it, DIY-style!

I've always been a decoupage fan, so I'm looking for anything you are looking to get rid off. Chairs, desks, lamps, frames end tables, dishes, fabric, old broken watches & jewelry, etc.. Any random little trinket you've got laying around. I crochet, so yarn is good, too.

I also want to start my first quilt soon, with the help of Therese, of course. I have lot's of old t's, etc.. to use, but I'm always looking for ideas, so if you have a quilt (or any other DIY) you're pretty proud of, post the pic here for me. :)

And, I love to find new ways to re-use just about anything, and I'm pretty damn good at it, too! Looking to hit the jackpot, & find someone who just doesn't have time for crafts, and wants to clean out their inventory LOL!

Free Weight-Loss Tips! (now that I have your attention..)

So, being that I'm a C.P.T (Certified Personal Trainer), I get asked ALL the time about slimming down quickly.. what works best, do I have any P.T secrets, etc.. And so, I figured that I would blog, just for you, my top 'secrets' for a quick, safe slim-down.
(following these tips will help you to reduce bloat & belly fat - you will not experience a large weight-loss at one time- there is no way to safely do this, as weight-loss shuold be gradual, about 2 lbs/week. Your pants WILL feel slimmer, and your digestive system will be working at it's peak.)

Ok, so these are things that I've found to work pretty well, and fairly quickly..


*Yogurt - Make sure it's not loaded in sugar, and it has active cultures in it. MELTS belly fat, seriously. Eat 2 servings (about 1 cup) a day.

*Cucumber/Lemon Water - Add lemon & cucumber slices to water, and drink a ton, because the next tip is..

*Water, and LOT'S of it!! I carry a water bottle w/ cucumber'lemon water in it all the time. Lemon cleans out your liver & stuff, and cucumber cuts bloat.

*Cut way back on salt, yeast & carbonation - All make you retain water & bloat.

*Protien - Lean & plenty! 2 o.z of nuts a day is they key amount to shoot or with nuts, that number has proven to be effective with weight-loss.

*Fiber - Supplement, preferably, since some veggies high in fiber can cause you to bloat. Take supplement with plenty of water.

*Proper Supplements: Vitamin D3, Calcium, Fish Oil & Multi-vitamin = VERY effective combo

*And don't forget a daily treat! Shoot for about 100-120 calories. I'm a big believer in rewards, so reward yourself! Dark chocolate is good, full of antioxidants.

So, I hope this helps! This is my advice from my personal experience and research. And remember, changing your eating habits is only half the battle. Contact me to schedulae an Initial Fitness Eval (required before starting any fitness program) and get the exercise part covered, too!

My Real-Life FarmVille

Next summer will be an AWESOME summer!! Decorating a new place, getting set up in our new 'Mansion', more pets (hehehe!), more new business ventures, and I can't wait until I can FINALLY cultivate my huge garden that I've been wanting, because I have BIG plans! Basically, Nikkis own Real Life FarmVille!
 I would like to be able to go out into my garden, and 'pick' dinner. Then, head over to my happy chicken or turkey coop, nab a little protien. Or my trout pond, or maybe some of the fresh venison in the cooler. Pick some fruit for dessert. Season all of the above with herbs from my own herb garden, and wash down with home-brewed beer made from hops grown (you guessed it!) on my shed, while sitting on the swing next to the koi pond and rain garden. Oh, and did I mention that herd of dogs that I have following me?? Like I said, I cannot WAIT to get moved out of this teeny little mini-Mansion, and into our new home! !

Gettin' Fit... with Farmville!!

Yup, I said it. That's right. Gettin' fit with Farmville. =]  First off, let me explain one thing; I am not the die-hard Farmville-ian. If I have some spare time, & feel like playing a game, FV is one of my three 'go-to' games. (..just so you're not thinking I'm a daily-obsessive-FV-freak.) So, being a Personal Trainer, I'm always looking for new opportunities to sneak in some fitness, which brings me to Farmville...

Yes, I have designed the simple, sweat-free, break-through workout that will change your life! No, I'm kidding. (don't ever fall for that, BTW!) I did, however, make a mini-routine that I run through anytime I do anything with FV. That includes; logging on, & accepting or sending gifts. And, if for whatever reason (long, boring day) I happen to log in twice in one day? Mini-routine reps are doubled. Here it is, my FV mini-routine:

Pushups: Until muscles completely fatigued (That determines your # of reps to shoot for in each exercise)
Lunges/Wall Squats: Until muscles completely fatigued
Crunches: Until muscles completely fatigued
Bicep Curls: Until muscles completely fatigued


..And that's it. Simple as that. Takes all of 4-5 minutes. Feel each move, from start to finish. Full movements & good form will give you the best results & prevent injuries.. which will lay you up, and you'll play MORE FV lol! Maybe it sounds silly, but you can do this with any game, or activity. (Status update workout, anyone??) Just have fun with it!     (..and be my neighbor in FV lol!!)

Nikkis Sloppy Does Recipes

This is the time of year when we get all kinds of vension in our fridges & freezers! I'm always looking for new vension recipes, and here's one that I've perfected! =]

Nikki's Sloppy Does
1 lb ground venison
1 med. onion, sliced
1 bottle hickory-smoke flavored BBQ sauce
1 tsp. worchestershire sauce
1/2 c. finely diced green pepper
Burger Buns
Sliced onion
Pickles

Brown (DO NOT OVERCOOK!) venison with onion. Add BBQ sauce, Worch. sauce and green pepper and heat until boiling. Spoon onto buns & serve with cold beer!  (LOW-FAT meal in less than 15 minutes!)

Nikkis Grilled Venison BackStraps

Ingredients


2 pounds venison backstrap (tenderloin), cut into 2 inch chunks
1 quart apple cider
1 1/2 pounds thick sliced bacon
2 (12 ounce) bottles barbecue sauce, your choice
 
Directions


Place chunks of venison into a shallow baking dish, and pour enough apple cider in to cover them. Cover, and refrigerate for 2 hours. Remove, and pat dry. Discard apple cider, and return venison to the dish. Pour barbeque sauce over the chunks, cover, and refrigerate for 2 to 3 more hours.

Preheat an outdoor grill for high heat. Charcoal is best, but if you must, use gas. Remove meat from the refrigerator, and let stand for 30 minutes, or until no longer chilled. Wrap each chunk of venison in a slice of bacon, and secure with toothpicks.

Brush the grill grate with olive oil when hot, and place venison pieces on the grill so they are not touching. The bacon will kick up some flames, so be ready. Grill, turning occasionally, until the bacon becomes slightly burnt, 15 to 20 minutes. The slower, the better. Enjoy! I like mine with a little horseradish.

Nikkis Skinny Ranch Recipe

The ranch addict like me will appreciate this recipe! I'm very picky about my ranch - If it's not Hidden Valley, forget it. But this is amazingly good!!

Nikkis Skinny Ranch
1 c. fat-free sour cream
1/4 c. buttermilk (non-fat)
1/4 fat-free mayo (not Miracle Whip!)
1 1/2 tsp. onion powder (not salt)
1 tsp. minced garlic
1 Tbsp. lemon juice
2 Tbsp of each; Minced scallions, Chopped parsley, salt & pepper.

Whisk together in a bowl. I funnel mine into a kitchen squirt bottle (like a ketchup-style) and it's easy to use. Enjoy!!

Nikkis Spinach & Ricotta Stuffed Shells

Sooo very simple, and soo gooey and cheesy.. nom..nom..nom...

1 box frozen chopped spinach
1 (15oz) container Ricotta cheese
1 lb. ground beef
1 box jumbo shells
Parmesan cheese
2 cups Mozzarella cheese
Minced garlic / onion (add what you like)
Parsley
Salt/Pepper to taste

Homemade tomato sauce*
*Sauce:
Combine 1 lg. can diced tomatoes, cooked ground beef, 2 T. Italian seasoning, combine and simmer on stove while making pasta. (this is where I add my secret ingredient, not listed in this recipe.)

In large skillet, brown meat. Cook jumbo shells and rinse thoroughly until cool to touch. Combine ricotta, spinach, garlic, Parmesan and 1 c. mozzarella and mix thoroughly. Stuff shells. While boiling/stuffing pasta, make your sauce. Simmer burger & tomatoes. Cover bottom of pan with meat sauce arranging shells in single layer. Top with sauce, and Parmesan & remaining mozzarella cheese. Bake in 350 degrees oven until heated through, about 30 minutes. Serve w/ garlic bread.
 
Tip: I use a disposable pan. Easy clean-up!

Baby News!

..And the news is?? We're not having one. Or two. Not now. Or ever. Since getting married, the ONE question on everyones minds seems to be "When are you having kids?"  (good grief!)
When I was born, I was a very sick little baby. I had a 'knot' in my intestine, and had many serious surgeries at 3 weeks to to help me survive. As a result of complications with one of the surgeries, I can't have babies.(still get monthly gift tho, how pointless is that ?? LOL!)  Jake knew this a long time ago, so it wasn't a surprise to him at the last minute or anything, don't worry.
YES, we know we can try adopting, or a surrogate. YES, we know we have options if we do decided to try & become parents. And YES, I am sick of answering questions about it. We are going to be happily married sans kids, just accept it. YES, people can do that! It's totally legal, and our choice. We have plenty of friends with little ones for those days that we want to punish ourselves (JK, guys!) Kids are great, and growing up the oldest of 3 kids, I don't feel like I 'missed out' on being maternal. I always have been.
We have our 2 dogs, Tao & Yukina AKA Fidget, and those are our kids. So, yes, we will we getting more dogs! (I have a list of dogs I want, WITH names, lol!)

..Just wanted to blog this, in hopes that's a few more times that I don't have to explain why no babies. Thanks for taking the time to read.

Ok, who DIDN'T hear about Facebook becoming a paid site starting in July?? (whatta crock!) I'm laughing at all the ppl who joined the group, cause it's probably another virus! So, here's the rest of the story..

Applebee's Spinach Appetizer 'Za.. YUMM!!

This is my Dad & I's favorite appetizer at Applebee's- Sooo creamy, & Delish! It wasn't on the menu for awhile, so I HAD to find the recipe! And now you can try it too, my lovelies!!


Applebee's Spinach Appetizer Pizza (copycat)

6 whole pita breads ( I seem to remember them being on a tortilla, though!)
1 package (10 oz. size) frozen spinach
1/3 cup yeast
1 medium onion
6 plum tomatoes
1 package (8 oz. size) fresh mushrooms
4 cloves garlic
1 teaspoon each: basil, parsley, cayenne pepper
(I'd also add some chopped artichokes!)
1/2 cup milk, more if needed
4 tablespoons flour

Thaw spinach completely, press out all water. Heat milk in saucepan, when hot but not boiling stir in flour. Stir until sauce begins to thicken, turn heat down. Add yeast and spinach. Stir constantly until thick and gooey, only about 3-4 min. In separate pan, sauté onion, garlic, until onion is tender. Stir in tomatoes, mushrooms, and spices. Sauté until just done. Preheat oven to 425°. Using a very sharp bread kni fe, split each pita bread so that you have two round flat pieces instead of one thick one. Place each piece of bread on a cookie sheet or pizza pan. Spread spinach sauce over each. Top with tomato mixture, being careful to avoid the juice. Bake for 5 to 7 min. Watch closely so that the edges of the pita don't burn. Makes a nice crunchy crust.

Mrs. O'Leary-Cronquist vs the Job

So, after the wedding, I'm planning on possibly looking to pick up another part-time job. I'm still at Four Seasons, but their 'legal process' is moving soo slow. Maybe Avon again, that was fun. I know that I'm absolutely NOT interested in serving food, or cleaning rooms. I already serve food at Seasons, and I REFUSE to do Housekeeping again! Blech! Hoping I can find Front Desk, Customer Service-type job- That's my forte anyways, so I'll stick with that! AND, I'm still selling on eBay, but that's on hold because my PayPal may have been hacked into.. again! Also looking to pick up a couple more photo shoots.

And my school is on hold too.(I'm working on my Degree in Marketing). Between planning the wedding, summer (no excuse there LOL!), and not having enough hours at work, I'm a bit behind :( Wheeeew! Been a busy girl- let's add more BAHAHA!

My Fave Drugstore Buys!

So, I ABSOUTELY love Wal-Greens! I could walk around that store for hours... and I HAVE!! (AND Target! LOL!) There's just soo much there, with a cure or fix for just about anything! Here are some of the MAJOR great products I've found there, & here they are;

Queen Helene Mint Julep Mask - Best for blemishes! And smells soooo minty, and feels major refreshing!

Burt's Bees Lip Balm - Just the plain ole stuff in the yellow tube. Works good for dry skin patches too,  if you don't have lotion.

Vaseline - For moisturizing, removing makeup, blending makeup, protecting skin from hair-dye, ... the possibilities are ENDLESS!!

Veet Hair Removal Kit - If you're as bad at shaving as I am, you'll love this kit! With a bladeless razor & thick formula, this kits rocks!

Jergens Natural Glow Daily Moisturizer for Body / Face - Daily tanning w/ no harmful rays .. ALWAYS good!!

Nikkis Pork & Shrimp Eggrolls

Nikkis Pork & Shrimp Eggrolls


1/2 lb. ground pork
1 clove minced garlic
1 tbsp. cooking oil
2 c. finely chopped bok choy
1 c. chopped fresh mushrooms
1/2 c. finely chopped onion
1/2 c. finely chopped celery
1/2 c. chopped water chestnuts
1/4 c. shredded carrot
1 (4 1/2 oz.) can shrimp
1 beaten egg
2 tbsp. soy sauce
2 tbsp. sherry
1/2 tsp. sugar
1 pkg. egg roll wrappers

In skillet stir-fry pork and garlic in tablespoon hot oil (drain). Add vegetables and stir-fry for 3 or 4 minutes more. Drain shrimp and chop. In a bowl combine shrimp, pork-vegetable mixture, egg, soy sauce, sherry, sugar and salt. Mix well and chill.

Use approximately 2 heaping tablespoons for each egg roll - deep fry until golden brown. Serve warm, with Sweet and Sour, and Soy Sauce. Also, Wasabi if you like!! (I do!)



Nikkis Southwest Eggrolls w/ Spicy Ranch Sauce

Nikkis Southwest Eggrolls w/ Spicy Ranch Sauce

Ingredients


2 tablespoons vegetable oil
1 skinless, boneless chicken breast half
2 tablespoons minced green onion
2 tablespoons minced red bell pepper
1/3 cup frozen corn kernels
1/4 cup black beans, rinsed and drained
3 tablespoons frozen chopped spinach, thawed and drained
2 tablespoons diced jalapeno peppers
1 tablespoon minced fresh parsley & cilantro
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/3 teaspoon salt
1 pinch ground cayenne pepper
1 cup shredded Monterey Jack cheese
5 (6 inch) flour tortillas
1 quart oil for deep frying

Directions

Rub 1 tablespoon vegetable oil over chicken breast. In a medium saucepan over medium heat, cook chicken approximately 5 minutes per side, until meat is no longer pink and juices run clear. Remove from heat and set aside.

Heat remaining 1 tablespoon vegetable oil in a medium saucepan over medium heat. Stir in green onion and red pepper. Cook and stir 5 minutes, until tender.

Dice chicken and mix into the pan with onion and red pepper. Mix in corn, black beans, spinach, jalapeno peppers, parsley, cumin, chili powder, salt and cayenne pepper. Cook and stir 5 minutes, until well blended and tender. Remove from heat and stir in Monterey Jack cheese so that it melts.

Wrap tortillas with a clean, lightly moist cloth. Microwave on high approximately 1 minute, or until hot and pliable.

Spoon even amounts of the mixture into each tortilla. Fold ends of tortillas, then roll tightly around mixture. Secure with toothpicks. Arrange in a medium dish, cover with plastic, and place in the freezer. Freeze at least 4 hours.

In a large, deep skillet, heat oil for deep frying to 375 degrees F (190 degrees C). Deep fry frozen, stuffed tortillas 10 minutes each, or until dark golden brown. Drain on paper towels before serving.
 
Spicy Ranch Sauce: Combine Buttermilk, Ranch Dressing mix packet, cumin, pepper, garlic, cayenne, black pepper & paprika.

DIY Beauty

So, I am a big fan of DIY Beauty Recipes! Here are a few of my favorites! Enjoy!

Oatmeal Yogurt Mask (For All Skin Types)
1 tablespoon oatmeal, finely ground
1 tablespoon plain yogurt
a few drops of honey
Add the yogurt to the oatmeal in a small bowl and mix together. Warm a few drop of honey. To do this, warm a spoon under hot water for a minute, then add a few drops of honey to the spoon. Stir the honey into the yogurt and oatmeal mixture. Apply the mask to face. Leave on for 10 minutes, then rinse off with several splashes of warm water.

Banana Mask for Oily Skin


1 banana, preferably ripe (you can keep ripe bananas in the freezer. Let it thaw before using)
1 tbsp honey
an orange or a lemon

Mix the banana and honey together in a bowl. Add a few drops of juice from an orange or a lemon. Apply to face for 15 minutes, then rinse.

Classic Eye De-Puffer

2 chamomile tea bags or 2 slices cucumber

Make a cup of tea for you and a friend. Remove tea bags and place in refrigerator until chilled. Place cool tea bags on closed eyes for 10 minutes. Or put cucumber slices in fridge until chilled and place over closed eyes for 10 minutes.

Face Scrub (Brightening)

1/2 lemon, cut in half.
Bowl of sugar

Dip lemon into sugar, and gently exfoliate your face!

Post-Employment Survey

So, you may or ay not have heard that I quit my job at (***). And I'll bet you want the story behind it.. (without mentioning names)
1. Scheduling Games - If it's not on the schedule, how am I supposed to know that you want me to come in and work?? Nor can you tell me the day before that I'm scheduled to work on a day off! I received a list from my co-worker with the dates of all the days she was taking off (days I would need to come in). My boss instructed me to 'disregard' that list, because he would be making the decisions on which days I would be working, and NOT TO EVEN MENTION IT TO HER!
2. Stating to me that I'm owed a raise, but they don't have money to give it to me, so in June, I may (or may not!) receive a differential check. It's been back & forth so many times, who even knows anymore??
3. I've been working there since last June. I'm on 2 closing shifts a week. HOWEVER, APPARENTLY I am not smart enough to know how to lock a door at night, or I must be planning on robbing the place, because I STILL HAVE NO KEY! I'm educated, with no criminal record whatsoever. My boss drives in on Tuesday nights for the last 15 minutes & 'baby-sits' while I close, then he locks up. Could you BE any more demeaning? I'm not an idiot. And I know it's not a SAFETY thing, because...
4. Being harassed - Yes, there is a customer who comes in repeatly drunk, & harasses me. My boss has seen this, he said that he told him not tom come in anymore. He's STILL coming in, he's STILL harassing me, and I had to threaten to call the Sheriff on him. Told my boss again..and the guy came in again the next day. Did my boss ask him to leave? No. Was the customer drunk & harassing? Yes. Do I feel like my boss was doing his job, & making it a safe, harassment-free workplace, for the employees? Not anymore. Have I come home in tears because of this? Yes. Is it worth it? NO!

And THIS is why I quit my job. I feel pretty relieved now, like a huge black cloud has passed over my head. Now I can focus on school, wedding & my photography. It's not as if I don't have other jobs, or income. Au revior!

If You Paint a Turd gold, You Still Have a Turd.

'Our' cabin is being painted today. Nevermind the fact that it's damn near falling apart inside, complete with countertops from 1972 & a hole in the floor of the front breezeway. BUT, as long as it looks good on the outside, I guess that's all that matter, right?!   (ggrrr...) It will be SOO nice to finally move outta here, out to Baptism, to our OWN spot, & out of 'Parent-Central' LOL! I've been looking at decorating ideas, paint, etc.. I'm getting excited! Jake says we should be in this summer. (happy dance!) I'm really into Japanese-inspired decor, plants, zebra, Feng Shui, etc.. so that's the type of thing that we're registered for at Target. NOT TO MENTION camper season is here! Time to get up to Itchy-Belly & give our 'Love Shack' it's annual once-over. That camper is about my favorite spot in the summer! I can spend every spare second there. Not looking forward to the ticks & skeeters, but you can't have your beer & drink it too, I s'pose! It'd be nice to get garden up there, maybe more lawn furniture, hmm.. picnic table maybe? AND A SLIP n SLIDE!! All about the Slip n Slide!

Ok, so I've pretty much eliminated/blocked the FB games/apps that I'm not into. (No Fishville, haha!) But 1 that I still love? Restaurant City! Come be my neighbor! I'm trying to get as many of the Salmon, Rice, Wasabi & Seaweed to get my Sushi Bar - Help me out?

Nikki's 'Intro' Blog

Well, since Therese did an 'intro' blog, I suppose I will too. Hmm.. where to start? It's really quite simple.. I'm me. A little of this, & a little of that. (I feel like I should be on a TV screen, with my name under my face, speaking to a camera LMAO!) So, I'm engaged to my best friend, who I laugh with almost every second we're together. That really is the basis of our relationship - Humor. He's inside my head, always saying things just as I was thinking them. He says I do the same to him. We love music, celeb gossip (OMG SOO glad he's not reading this!!), fishing, camping, dancing, bonfires, & being w/ our 'people'. We're planning on building a house, on Baptism Lane in Finland. The ginormous garage is there now, with a loft where we'll (hopefully) be living after the wedding at the end of July. (SOO excited, BTW!) My favorite household chore? The chores that Jake does! (wink) My least favorite chore? DISHES!! I don't have a dishwasher (only Jake on a part-time basis LOL), so dishes are the worst. And I always have tons! I'm constantly cooking (Not much of a baker tho.) I don't like rude, ignorant or arrogant people. Nor do I surround myself with people I don't trust. I'm currently working on my Associates in Science Degree in Business Mgmt, with a major in Marketing. I' love school! What can I say.. I'm a Lifer! I have 2 fan-tabulous dogs, Yukina & Tao, who I just adore! My babies! I love penguins, tigers, dancing, purple, Star Wars, Disney Pixar movies, tacos, comedy, sushi, & Captain Morgan (wink wink!) I love photography & am pretty good with a camera. (Hmm.. this would be easier if someone was asking me questions, reality-TV styles LOL!) I can be a pain in the ass (ask Jake), but I'm worth it (again.. ask Jake!) I'm a freakin' K-L-U-T-Z!! My stepmom Margie (who recently passed) said I could 'trip over air' & nicknamed me 'Dizz-Butt'! So, don't follow me, because I'm run into & trip over everything!! (You've been warned LOL!) So, I guess that's Nikki in a Nutshell (now available on eBay, & makes a great gift!) You're welcome ;-)

HG Shamrock Shake

Hungry Girls Shamrock 'n' Roll Shake


PER SERVING (1 shake, entire recipe): 176 calories, 4g fat, 142mg sodium,

29.5g carbs, 3.5g fiber, 16g sugars, 7.5g protein -- POINTS® value 3*


Ingredients:

1 tbsp. Coffee-mate Sugar Free French Vanilla powdered creamer

3/4 cup light vanilla soymilk

1/2 cup Breyers Smooth & Dreamy Creamy Vanilla fat-free ice cream

1/4 tsp. peppermint extract

2 drops green food coloring

1 no-calorie sweetener packet (like Splenda)

1 1/2 cups crushed ice (8 - 12 ice cubes' worth)


Directions:

Combine Coffee-mate with 1 tbsp. hot water and stir to dissolve. Transfer

mixture to a blender and add all other ingredients. Blend at high speed until

mixed thoroughly. Pour into a glass and enjoy!

Baked Halibut with Sour Cream, Parmesan and Dill Topping

Baked Halibut with Sour Cream, Parmesan and Dill Topping


2 pieces halibut or other mild white fish, thawed if frozen and patted dry with paper towels

salt and fresh ground black pepper to taste

3 T low-fat sour cream

1/4 tsp. garlic powder (can use 1/2 tsp. finely minced fresh garlic, but the garlic powder was easy)

1/4 tsp. dill weed (dried dill leaves)

2 T finely ground Parmesan cheese

3 T sliced green onion (about 3 green onions)


Thaw frozen halibut overnight in refrigerator, then place in baking dish and blot dry with paper towels. Let the halibut come to room temperature while you prep other ingredients. Preheat oven to 375F/190C.

Slice 3 T green onions, then measure 2 T and finely chop them. Reserve the other 1 T sliced onions to garnish the cooked dish.

In a small bowl, stir together the sour cream, garlic powder, and dill weed. Stir in the finely grated Parmesan cheese and green onions. When fish has come to room temperature, use a rubber scraper to spread an even coating of this topping over each piece of the fish, using all the topping mixture.


Bake fish until the internal temperature reaches 145F/62C, or until fish pieces feel firm but not hard to the touch. (Use a fork to press down to test.) Serve hot, sprinkled with remaining sliced green onions.
Timing will depend on the thickness and type of fish you're using.

Cook salmon, either on the grill (my favorite method) , in your stove top grill pan, or bake it, and then serve it with the Low-Fat Tzatziki sauce for a delicious combination.

Yummers!! This sounds SOOO good!! I'll let you know when I try it out!!

Small can of mixed vegetables or your choice
Perdue pre-cook chicken or leftover chicken
